One of my favorite treats this time of year is homemade ice-cream. It is dairy and sugar-free, tasty and oh so refreshing! This recipe is very easy and I guarantee you that your whole family will love it. No sticky mess or enormous amount of calories packed in a single serving. The kids won’t even realize they are eating “healthy” ice-cream; it is so creamy and flavorful
All you need is some frozen bananas, other fruits of choice and your favorite toppings. Voila! You have homemade ice-cream that tastes just as good (if not better) as the store bought kind which is packed with sugar and artificial flavors.
You may have to eat your bowl of homemade ice cream pretty quickly after making it, or it turns into a fruit slushy in a few minutes. Not to worry though, you can always re-freeze it if you don’t manage to eat all of it in one sitting.
For today’s recipe, I decided to try making cashew cream and use it for a topping. I love cashews and prefer to use them in place of coconut milk.
Cashews are rich in vitamin E, selenium, copper and manganese as well as plant-based protein and health protective mono-unsaturated fats. I love the cashews’ sweet and nutty flavor, so I use them a lot in raw desserts like raw cheese cake and in my raw coconut chia balls, which are now for sale on my website if you ever wanted to give them a try!
Making cashew cream is very simple. You soak a cup of cashews in water for 30 min, drain and blend with lemon juice and water until a creamy consistency forms. So yummy!
I had some blackberries sitting in the freezer this weekend, so I decided to use the cashew cream and mix it with the berries to make myself this special frozen treat. What a delight it turned out to be!
All you need for the ice cream base is two frozen bananas (I peel them and stick them in the freezer overnight) and some frozen berries. You add all ingredients in a blender and pulse until you get ice cream. That’s it!
If you don’t plan to eat it right away, place it in a container and store in the freezer. You can then easily scoop it up later and serve it in bowls.
My favorite toppings are walnuts, chia and raw cacao nibs, but you can throw anything in there really, just try to keep it light and healthy ♥

- Ice Cream
- 2 large frozen bananas
- 1 cup frozen blackberries
- Cashew cream:
- 1 cup of raw cashews soaked in water for 30 min to soften
- ¼ cup lemon juice
- ¼ cup water
- Blend all the cashew cream ingredients first and set aside
- Toss frozen bananas and berries in a blender and pulse until a creamy consistency starts to form. You can add some of the cashew cream to the mix, but leave some for topping.
