If you are like me, you always keep a stash of your favorite comfort foods in your kitchen cabinet.
Luckily, overtime my comfort foods have also turned into my healthy indulgences. When look in my kitchen pantry today, instead of twizzlers (yes, I have always had a weakness for twizzlers!) and reese’s peanut butter cups, you will find homemade chocolate, oatmeal cookies and my all-time favorite snack, freshly-baked granola ♥
I love granola so much that I baked a big batch of it last year around the holidays, stuffed it into Mason jars, and gave it to my friends for Christmas! It was one of the best gifts I’ve ever given, because it was delicious, made with pure, all-natural ingredients and lots of love, of course ♥
With the fall now upon us, the weather is starting to change and there is a noticeable chill in the air. It is time to go back to the fuzzy leg warmers and chunky wool sweaters.
I don’t know about you, but fall makes me feel a bit sleepy. Like everything else in nature, my body needs more rest. All I want to do is veg on my couch with a cup of tea and munch on things; lot’s of warming, sweet things 🙂
I must admit, I am not the best and most skilled of cooks, but I love to bake and I enjoy experimenting with healthy dessert recipes. You know I love my sweets!
As I thought about a healthy snack I can indulge in this time of year, once gain the image of homemade granola popped up in my mind. This yummy treat is super quick to make, it is healthy and packed with seasonal flavors, like maple syrup, nut meg and cinnamon. I wish you were here right now, because my entire kitchen is filled with its sweet aroma. Yum!
You see, your favorite sweet treats don’t always have to be a guilty pleasure; they can be an everyday nutritious treat if you simply cut down on the processed stuff and sub it for high quality, natural ingredients.

- 3 cups steel cut oats
- ⅓ cup maple syrup
- 2 Tbsp almond butter
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ cup raw almonds (chopped up)
- ¼ cup raw pumpkin seeds
- ¼ cup unsweetened coconut flakes
- ¼ cup coconut oil
- ¼ tsp of sea salt
- Preheat the oven to 275 F and line a baking sheet with parchment paper
- Mix all ingredients in a bowl making sure that the oats are evenly coated in the coconut oil and spices
- Spread evenly in the baking sheet and stick in the oven for 20 min or until golden brown
- Stir occasionally to make sure granola is evenly baked and doesn't burn
