This week I am taking advantage of all the gorgeous sun-kissed fruits at the farmers’ market to prepare this special treat for y’all.
With all fresh and very colorful produce available this time of year, it is really not much of a challenge to come up with healthy plant-based recipes. My newest obsession is the heirloom watermelons which are truly the sweetest, low-calorie fruit I’ve ever had!
You know I like to keep my recipes light and simple, so this one is a perfect example of how you can create something delicious, beautiful and nutritious within a matter of minutes. All you need is some inspiration (I get that from mother nature, look at all the color!) and a decent blender (NutriBullet is what I have and absolutely love it).
I came up with this recipe over the weekend trying to figure out what to do with the gorgeous heirloom watermelons I bought at the market. I wanted to blend up something easy, refreshing and fun.
I love yellow as it reminds me of the sun. Indeed all the beautiful yellow fruits I used in this smoothie (mango, banana and watermelon) are bursting with ripeness and the sweet flavors of summer!
This gorgeous fruit cocktail is packed with potassium, fiber and antioxidant nutrients like vitamins C, E & carotenes which give fruits and veggies their vibrant colors.
This recipe is also light on calories (watermelon is over 95% water) and super refreshing on a scorching summer day as you are lounging by the pool ♥
I am sure you can’t wait to have a sip of this yummy cocktail, so let me give you the recipe.
- 2 cups heirloom (yellow) watermelon, or regular melon
- 1 cup mango
- 1 banana
- 1 Tbsp hemp seeds (optional)
- ½ cup ice (optional)
- Blend all ingredients until smooth
- Drink immediately or store in an airtight container in the fridge
